In 1999 Skyhawk planted their first 740 Olive Trees originally from Tuscany at there Estate in Angels Camp, California - establishing the Skyhawk Olive Orchard.

Skyhawk Extra Virgin Olive Oil is produced from selected Frantoio and Leccino olives grown at our Skyhawk Olive Orchard and are Harvested by hand at the perfect level of maturity to achieve the International Award Winning Quality.

The olives are cold pressed and kept in 5 to 15 gallon drums until bottling to retain the outstanding flavor - emerald golden color and nutritional values. The also make a variety of flavored olive oils and an aged balsamic vinegar.
